Quick fridge cheese cake

If you want to make a quick and easy fridge cheese cake this is it and, it happens to be super tasty.

Step 1…

Base
  • 1 Packet crushed tennis biscuits ( I used 3/4 packet because I like a thinner base.)
  • 120g Melted butter

Mix these together and place into either a dish or a springform pan. Place in the fridge while you make the cheese cake filling.

Step 2…

Filling
  • 3Tbs gelatin in 70ml boiling water (mix until dissolved and set aside to cool.)
  • 1 Tin condensed milk
  • 100ml Lemon juice
  • 1 Tub Smooth cottage cheese
  • 250ml Cream (whipped)

Method

In a bowl, mix cottage cheese, condensed milk and lemon juice together.

in another bowl whip cream until firmly whipped.

Add the condensed milk mixture to the cream mix until combine.

Fold in gelatin to the cream and condensed milk mixture.

Pour into your tin and set over night.

Optional

As decoration, I added some peaches and peach juice jelly to mine to add some extra class and make it look a little different.

Here is  what I did…

Let the cake set in the fridge for 2hours

Thinly slice your peaches

shape into a rose by layering them from the center of the cake.

For the jelly

  • 1/2 Cup Peach juice
  • 2tsp Gelatine disolved in 20ml boiling water

Add the gelatin to the juice and pour over the roses leave to set overnight.

Simple as that.
